Ingredients

  • 2 Small cucumbers
  • 1 Small cabbage
  • 4 medium slices pineapple
  • 1 Small red onion
  • vegan mayonnaise
  • 1/2 Small carrot
  • 1/2 Small red cabbage
  • 4 Large pickles

Directions

Step 1
Dice the cabbage, red cabbage, red onion, pineapple, and 2 of the 4 pickles. Place all the diced vegetables in a strainer and let drain.
Step 2
Peel the cucumbers and cut them in half length-wise. Dig-out the cucumbers like a canoe.
Step 3
Mix the drained vegetables with the vegan mayonnaise.
Step 4
With a spoon, fill the cucumbers with the mix.
Step 5
To garnish, use the 2 leftover pickles.
