Ingredients

  • 1 Medium peeled sweet potato
  • 1 Medium peeled potato
  • 2 Large carrots
  • 1 Medium red onion
  • 1 cup green peas
  • 1/2 Medium red pepper
  • 1/2 Medium green pepper
  • 1/2 leek
  • 1 tablespoon curry powder
  • 1 pitted red apple
  • 1/2 cup cauliflower
  • 1/2 teaspoon ground ginger
  • pinch salt
  • pinch basil
  • 2 tablespoons olive oil
  • 200g buckwheat flour

Note

Prior to baking, you can freeze the curry vegan burgers for later preparation.

Directions

Step 1
Pre-heat the oven at 200ºC/392ºF.
Step 2
In a food processor, process together the sweet potato, the potato, the apple, the leek, the carrot, and the onion.
Step 3
After in a frying pan, add the olive oil and fry them until soft.
Step 4
Again in the food processor, process the red pepper, the cauliflower and the green pepper.
Step 5
Cook them together with the previous mixture and add the green peas.
Step 6
Once cooked, strain the oil from the mixture and mix with the buckwheat flour, the curry, the salt, the ginger, and the basil in a bowl.
Step 7
Shape into approximately 12 burgers. Then, place the burgers on an oven sheet.
Step 8
Bake them in the oven until it has a crunchy exterior and juicy interior.
