This juicy pasta dish, in combination with seaweed and vegan calamari, will make you feel as if you are eating a traditional Spanish fideua plate.

Ingredients

  • 500g whole grain fideua noodles
  • 1 Medium red pepper (diced)
  • 1 Medium green pepper (diced)
  • 1 Large onion (diced)
  • 2 Large tomatoes (diced)
  • 1 bay leaf
  • 1 clove garlic (crushed and peeled)
  • 10g wakame and nori seaweed (previously rehydrated)
  • 150g vegan calamari
  • 100ml oil
  • 2 teaspoons Himalayan salt
  • 3 teaspoons tumeric
  • handful parsley
  • 200ml white wine
  • 1l vegetable broth

Note

You can choose to substitute the vegetable broth for purified water.

Directions

Step 1
In a non-stick pan, fry the whole grain fideua noddles with some olive oil and move them consistently until they have a brownish color. Place them in a bowl.
Step 2
In a paella pan or a frying pan, add a thin layer of olive oil, the turmeric, the bay leaf, the Himalayan salt and sauté the garlic clove and the diced onion until they are transparent.
Step 3
After, add the peppers and the calamari. When you see them turn into a goldenish color, add the tomatoes and sauté them, too.
Step 4
Then, use the wine and let the alcohol evaporate.
Step 5
Cover all the vegetables and the calamari with enough vegetable broth.
Step 6
Taste and correct salt, if needed.
Step 7
When it starts to boil, add the fideua noddles and the parsley. Bring and keep the noodles to a boil. Keep an eye on the pan. If needed, add more water if it starts to evaporate.
Step 8
After 4 minutes, add the seaweed.
Step 9
Keep cooking until the fideua noddles are at desire texture.
