These holiday spreads are amazingly delicious. This recipe makes a large quantity which you can store in the fridge for later use. They can be used for any occasion. They make great appetizers and snacks. Each of these spreads have a disgustingly, unique flavor. Perfect for when guests are over. You can use these spreads on small toasts or even make a sandwich like no other. Definitely a “go-to” recipe to have in the house. I created these recipes to use as my holiday appetizer. Ingredients

Smoked Tomato Spread

  • 150g dehydrated tomatoes
  • 1 tablespoon smoked paprika
  • handful pine nuts
  • pinch salt
  • pinch garlic and parsley
  • drizzle olive oil

Smoked Tomato Spread (Optional)

  • pinch black pepper

Raisin and Almond Tofu Spread

  • handful raisins and almonds
  • 150g water-strained tofu
  • pinch curry
  • drizzle olive oil
  • drizzle brandy
  • pinch garlic and parsley

Mushroom, Caramelised Onion, and Tofu Spread

  • 1 Small julienne-cut onion
  • 150g ripped oyster mushrooms
  • 125g water-strained tofu
  • drizzle olive oil
  • drizzle cognac
  • pinch salt
  • pinch garlic and parsley
  • 1 teaspoon brown sugar or natural sweetener

Note

If you want the Smoked Tomato Spread to be a little spicier, you can add a pinch of black pepper.

Directions

Smoked Tomato Spread
Step 1
First, let's hydrate the tomatoes. Boil them in a small pot with water for around 15 min.
Step 2
After, discard almost all the water but keep two tablespoons.
Step 3
Add all the ingredients, the tomatoes and the water in a food processor or blender and process them until desired texture is met.
Step 4
Serve with small toasts!
Raisin and Almond Tofu Spread

Start soaking the raisins and the almonds in a small cup with brandy and water.
Step 6
With your hands, break the tofu.
Step 7
In a pan, heat up some olive oil. Add the raisins and the almonds (don't throw away the liquid).
Step 8
After, add the tofu and the seasonings. Let them mix.
Step 9
Add the liquid and allow to evaporate a little bit.
Step 10
In a blender, blend everything together. you can keep them in a small jar until you need to use it.

Serve with small toasts!
Mushroom, Caramelised Onion, and Tofu Spread

In a pan, heat up some olive oil.
Step 13
Add the onion and let it cook slowly.
Step 14
When it's transparent, add the salt and the brown sugar. Wait until it's brownish. If it starts to become to dry, add the ripped mushrooms, the seasoning and a drizzle of water.

After, add the cognac. Let it evaporate but not all the way.

Blend everything together. If you want a smoother texture, add a small drizzle of olive oil.
