Ingredients

  • drizzle olive oil
  • 1 Medium diced onion
  • 2 cloves diced garlic
  • bunch fresh thyme leaves
  • 1 bay leaf
  • 1 cup sliced mixed mushrooms
  • 1 cup sliced shiitake mushrooms
  • drizzle soy sauce
  • 2 teaspoons corn starch
  • 2 cups vegetable broth
  • sprinkle ginger
  • 2 cups water
  • 1 teaspoon salt
  • 1 cup rice milk

Directions

Step 1
In a pot, warm up some olive oil.
Step 2
After, add the onion and garlic. After 5 minutes, put the onion and garlic in a separate bowl and add the mushrooms to the pot.
Step 3
Cook the mushrooms for 2-4 minutes. The mushrooms will expel water and shrink in size.
Step 4
Add back to the pot, the onion and garlic. Cook together for 5 minutes.
Step 5
Then, add the fresh thyme and bay leaf.
Step 6
Add the rice milk and soy sauce. Let it cook for 10 minutes.
Step 7
Mix in a cup, the corn starch and vegetable broth.
Step 8
Add the mix and the ginger to pot. Cook for 5-10 minutes until it gets thick.
Step 9
Using a ladle, remove the foam around the sides.
