Ingredients

  • 1 Medium chopped onion
  • 1 clove chopped garlic
  • 1 Large peeled and sliced carrot
  • 1 Small chopped carrot
  • 1 cup frozen green peas
  • 1/2 cup brandy
  • 2 Medium chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon black pepper
  • 2 teaspoons chopped parsley
  • 300g seitan
  • 2 Medium peeled and chopped potatoes
  • 1 cup dehydrated mushrooms
  • 1 bay leaf
  • 2 cups water
  • 1 teaspoon Himalayan salt
  • 50ml olive oil
  • pinch cinnamon
  • 1/2g vegetable broth
  • 5.7 Cm dark chocolate

Note

If you don't have dark chocolate for the mushroom stew, you can use 2 teaspoons of raw cocoa.

Directions

Step 1
Hydrate the mushrooms in a cup of water. Strain the water and add new water.
Step 2
Cut the seitan in irregular shapes of about 4 cm.
Step 3
In a deep pot, add the olive oil. Fry the seitan. Remove it and let it rest in a plate.
Step 4
In the same pot, add the chopped onion and the garlic.
Step 5
Add half of the himalayan salt.
Step 6
When the onion is transparent, add the chopped carrot ( it will give texture to the sauce). After, add the hydrated mushrooms (save the water from the hydration).
Step 7
Add the chopped tomatoes. Then, add the chopped parsley and the black pepper.
Step 8
After, add the brandy. Let the alcohol evaporate.

Add the bay leaf.

Let it cook for 10 minutes.
Step 11
If it reduces too much, add a cup of water (from the mushroom hydration) and modify the salt and pepper.
Step 12
Then, add the cinnamon, dark chocolate, and vegetable broth.
Step 13
Add the tomato paste, the sliced carrot, and the chopped potatoes.
Step 14
Let it cook for 5 minutes, and add the greeenpeas and the seitan.
Step 15
Cook until the potatoes are soft (approximately 15 min).
