The raw strawberry and orange cake does take a little time to make because it needs to put in the freezer, so it is highly recommended to do the night before. In the end, you will be making this dessert again. Great for parties as it serves a lot of people. Make sure you save a second piece for yourself or you’ll be out of luck.

Ingredients

For The Crust

  • 2 cups mixed raw nuts (pistacchios, almonds. sunflower seeds and hazelnuts) (peeled)
  • 1 cup dates (seedless)
  • pinch Himalayan salt

Orange Layer

  • 3 cups almonds (peeled)
  • 180ml orange juice (fresh)
  • Zest orange
  • 1/2 cup agave syrup
  • 1 juice lemon
  • 1/2 cup coconut oil (melted)
  • pinch Himalayan salt

Strawberry Layer

  • 2 cups strawberries (organic)
  • 1/4 cup orange layer mix
  • 1 cup dried cranberries

Directions

For The Crust
Step 1
Place the nuts and the dates in your food processor until they are crumbly and sticky. Pour and shape into a cake pan and place it in the fridge.
For Orange Layer
Step 2
Pour all the ingredients, except the orange zest and blend them in your food processor. After, with a spoon add the shredded orange zest.
Step 3
From the mix, put aside 1/4 of the orange layer for the strawberry layer.
Step 4
Add the rest to the cake pan and press it to give shape. Place it into the freezer, we want it fresh and with texture!
For Strawberry Layer
Step 5
Blend the strawberries and the 1/4 of the orange layer in the food processor. Process it to make it creamy, not liquid.
Step 6
Add the dried cranberries and mix them with a spoon.
Step 7
Pour over the cake pan and place it in the freezer at least a couple of hours but better overnight.
