In Catalunya, the annual festival of Saint Joan is celebrated on the 23rd and 24th of June. Adults and children also celebrate St. Joan by going to the beach, lighting firecrackers, and having parties. For Saint Joan, it is traditional to make this cake. You can find many variations. For example, with whipped cream or chocolate filling. This variation of the Saint Joan Cake is all vegan. The Saint Joan Cake has a soft, spongy texture with a subtle sweetness and goes perfectly with a cup of tea or coffee. Definitely encouraged to make even if it isn’t Saint Joan Day. This one is for the pastry lovers.

For The Brioche

  • 150ml vegetable milk
  • 270g bread flour
  • 80g raw brown sugar
  • 35ml olive oil
  • 20g yeast (fresh)
  • Zest half lemon (grated)
  • Zest half orange (grated)
  • 1 teaspoon orange blossom

For The Garnish (Optional)

  • agave syrup
  • pine nuts
  • almonds
  • candied fruit


Step 1
In a bowl, mix the raw brown sugar with the lemon and orange zests.
Step 2
In a separate bowl, mix the liquid ingredients: the vegetable milk, oil, and orange blossom.
Step 3
Crumble the fresh yeast and mix it with the liquid ingredients.
Step 4
Time to add the dry ingredients! In a new bowl, sift the flour and mix it with the brown sugar and the lemon and orange zests.. Stir until it is combined well.
Step 5
Add the liquid ingredients into the mixture. Move and knead. At first, it will be difficult to knead, but little by little it will stop being sticky.
Step 6
Once we have it thin and elastic, make a ball and let it rest in a oily bowl for about two or three hours.
Step 7
It has to double in size. After, pick and knead it again. Extend it over a baking parchment. It has to look thin. Let it rest for about 30 mins more.
Step 8
After that, start garnishing it! With a brush, paint it with agave syrup. Add, to your taste, the candied fruit, pine nuts, almonds, etc. and place it in the oven for around 15-20 min at 180º C.
