Ingredients

  • 1 Medium julienne onion
  • 1 Medium long-grated carrot
  • 1 Medium small-grated zucchini
  • 1 Medium julienne green pepper
  • sprinkle black sesame seeds
  • 1 tablespoon sesame oil
  • 1 tablespoon corn starch
  • 2 cups soy meat chuncks
  • 300g soba noodles

Soy Meat Marinade

  • 125ml tamari sauce
  • 100ml water
  • 30ml orange juice
  • pinch ginger
  • pinch garlic
  • pinch black pepper
  • drizzle rice vinegar

Note

You don't have to marinate the soy meat chunks of the spring soba noodles recipe for a full hour, but the longer you let it marinate the more flavor it will have.

Directions

Step 1
Mix together all the ingredients for the Soy Sauce Marinade. After, let the soy meat chunks marinate in the marinade.
Step 2
Boil a pot of water. When the water starts to boil, add the soba noodles.
Step 3
While the soba noodles are boiling, warm up the sesame oil in a wok. When warm, add the onion and cook until transparent. After, remove the onion from the wok and place aside.
Step 4
Cook the other vegetables individually until soft and crunchy. Then, set them aside.
Step 5
Strain the soba noodles. After, add a drizzle of oil to the noodles.
Step 6
Remove the soy meat chunks from the marinade and add them to the wok. (Do not throw away the Soy Sauce Marinade)
Step 7
When the soy meat chunks are goldish-brown, remove them form the wok and set them aside.

Mix the corn starch with the Soy Sauce Marinade. When it gets thicker, add the sauce to the wok.
Step 9
After the sauce heats up, add all the other ingredients except the soba noodles to the wok.

Lastly, add the soba noodles and mix.
