This potato rosti has a crunchy exterior and mellow interior with a mouth-watering, exotic flavor.

Ingredients

  • 2 Large potatoes
  • 1 Large sweet potato
  • 1/2 cup olive oil
  • 1/2 onion
  • pinch rosemary
  • 2 teaspoons salt
  • pinch black pepper
  • 2 teaspoons curry powder

Directions

Step 1
Dice the onion.
Step 2
Peel the potatoes and sweet potato, and grate them using the wide holes of a grater.
Step 3
In a pan, saute the diced onion with the olive oil, salt, black pepper and curry powder.
Step 4
When the onions turn a yellowish color, add the potatoes and the sweet potato.
Cook over low heat, stirring occasionally, until the mix is tender.
Step 5
Once tender, start pressing the mix with a spatula to make the rosti.
Step 6
Let it roast for about 6 min. Then, using a plate, flip the rosti and roast the opposite side.
Step 7
It has to be crispy on the outside and mellow inside.
