Ingredients

For The Sauce

  • 100ml soy milk
  • 400ml sunflower oil
  • pinch salt
  • drizzle brandy
  • 60ml organic ketchup

For The Filling

  • 1 Medium avocado
  • 1 Small pineapple
  • 1 Medium pomegranate
  • 4 boiled white asparragus
  • handful mixed lettuces
  • 1 long hydrated nori seaweed
  • drizzle balsamic vinegar
  • pink sauce made earlier

Note

It's a good idea to make extra tropical tartlets on the side because these things go fast!

Directions

For The Sauce
Step 1
In a measurement cup, add the soy milk, the salt, and 200 ml of the sunflower oil.
Step 2
With low power, start emulsifying with a hand blender. While emulsifying, drizzle-in the remaining sunflower oil (you may not need to use all).
Step 3
Once thick, add the ketchup and the brandy and blend together.
Step 4
Store it in the refrigerator.
For The Filling
Step 5
Peel the avocado and the pineapple and discard the bone from the avocado and pit of the pineapple.
Step 6
After, cut them into small squares.
Step 7
Remove the seeds from the pomegranate and keep on the side.

Chop the asparagus
Step 9
Cut the lettuce into small strips with scissors.
Step 10
First, add the sauce into the tartlets. Don't use a lot, only a little bit on the inside.
Step 11
After, add the mixed of lettuce.
Step 12
Add the avocado, the pineapple, the asparagus, the seaweed and the pomegranate seeds.
Step 13
Add over, a small drop of the pink sauce.
Step 14
Finally, add a drizzle of balsamic vinegar.
